  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Preparation

  1. Season and sear: Pat chicken dry, season with salt and pepper, and sear in a hot skillet with oil until golden (about 4–5 minutes per side). Remove and set aside.
  2. Sauté aromatics: In the same skillet, add onion and cook until soft. Stir in garlic, chipotle peppers, and adobo sauce for 30 seconds.
  3. Add liquids: Pour in chicken broth and bring to a simmer. Add heavy cream, cream cheese, cumin, and smoked paprika. Whisk until smooth and slightly thickened.
  4. Return chicken: Place chicken back into the sauce, spoon sauce over the top, and simmer for 5–7 minutes or until fully cooked.
  5. Finish: Taste and adjust salt/heat. Garnish with cilantro and a squeeze of lime just before serving.
