- 2–3 chipotle peppers in adobo, finely chopped (adjust for heat)
- 1 tbsp adobo sauce from the can
- ½ cup chicken broth
- ¾ cup heavy cream (or half-and-half)
- ¼ cup cream cheese (for extra creaminess)
- ½ tsp cumin
- ½ tsp smoked paprika
- Salt & black pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges for serving
Preparation
- Season and sear: Pat chicken dry, season with salt and pepper, and sear in a hot skillet with oil until golden (about 4–5 minutes per side). Remove and set aside.
- Sauté aromatics: In the same skillet, add onion and cook until soft. Stir in garlic, chipotle peppers, and adobo sauce for 30 seconds.
- Add liquids: Pour in chicken broth and bring to a simmer. Add heavy cream, cream cheese, cumin, and smoked paprika. Whisk until smooth and slightly thickened.
- Return chicken: Place chicken back into the sauce, spoon sauce over the top, and simmer for 5–7 minutes or until fully cooked.
- Finish: Taste and adjust salt/heat. Garnish with cilantro and a squeeze of lime just before serving.
